Chocolate Flame

The dessert I constructed for my brother's Seder tonight.

Base is flourless chocolate cake with just three ingredients: Butter (Euro style high butterfat), premium quality chocolate and eggs from cage free organically raised chickens. Baked in a water bath so the consistency is somewhere between mousse and truffles.

The Chocolate Flame variation has raspberry puree (from organic berries) added to the batter. It's frosted with chocolate ganache (premium chocolate melted in heavy cream from hormone and antibiotic free cows) flavored with a spoonful of Chambord (black raspberry) liqueur. Decorated with a wreath of chocolate leaves.

Slices are served on a small pool of creme anglaise (pouring custard) flavored with more Chambord, garnished with curlicues of raspberry puree.

I spent the week making the components and assembled last night. Had trouble finding a clean pair of jeans this morning as all my pants are spattered with chocolate, raspberry and cream. Kitchen needs major clean-up.

As a supporter of anything raspberry (especially when by itself or with chocolate), I approve. This sounds ridiculous. Even better that you used Chambord. Nice work!
