LOLBoth were good sneaky shooters here. But McMillan wanted macho, punchy shooting. He wanted specialists who stood around doing nothing else.
They wanted to shoot in the flow, to take what the defense gave them, and otherwise to pass. McMillan wanted them to face down the defender standing 3 inches away, overpower him while shooting, and leave hairy-chest scrape marks on his face.

Sergio has improved defensively. Rudy not so much.
Sergio runs the offense so well. He has a 3 point shot and improved ability to attack the basket (got blocked on a key play, though) which gives him more freedom to do what he does best: run the offense, make good decisions, the right pass - things he was good at with the Blazers as well.
I think he's a better defender than Rudy. You're right that it's not a strength for neither of them.
Maccabi played Very good defense. Their coach is maybe the best in Europe and they have 2-3 players worth an NBA contract.
I would totally be down with bringing back Sergio, but would he want to come here again? I would take Rudy too, but from what I understand he didn't really like Portland, and I don't think we'd be getting Rudy pre-Ariza.
