Hot springs are awesome over there...great Japanese health spas all over. I used to get out of the rat race of Taipei every weekend and book a hotel with piped in hot springs and a pool in your room...Mongolian BBQ next door...sweat all the city out for a couple days and head back in...this was the 80s before the high speed rail when the air was brutal...I can smell that Sulphur just thinking about it. Taxi ride up the mountain cost the same as the room. Being at the public hot springs over there is like playing basketball over there....you don't feel as small as you do back home
I love tofu but in only one dish. The dish is a Korean soup similar to Japanese Miso, Doenjang Jjigae. It all starts with fermented soy bean paste. It's got jalapenos, tofu, clams, zucchini and sometimes other ingredients such as mushrooms. It is always eaten with rice which is added to the jjigae. Coupled with your favorite kimchi it's mouth watering delicious. I once ate some in Beaverton that had so many jalapenos that I got sick at the stomach.
