Lemonade, Corona beer, mojitos
Whatever guests bring
I'd bring some 20% fat ground sirloin patties and some vanilla ice cream and real chocolate sauce of which I would use no more than a few drops. I might also bring some Tsing Tao beer or banquet Coors (regular not light). I'd hope you wouldn't mind the smell of beef burgers being grilled medium. Not really into mushrooms unless they're in a soup or sliced and on a pizza. Had some truffles once and no thanks, maybe if I had more money in our family as a child and been introduced to them at a young age I might enjoy them now.
 
I have no problem with beef burgers although prefer chicken, which also has advantage I can reheat leftovers or eat cold. My brother been vegetarian 30 years so always need meatless entree. Nephew allergic to eggs and dairy. Feeding my family a complicated business.
 
When I cook my steak I want to sear it until the fat starts dripping then I want to turn it on edge and literally set the fat on fire until it blackens. OMG, is there nothing more delicious than a medium rare seared NY with blackened fat.....

I do those in the air fryer and they turn out spectacular. Done them on the traeger too

I did them once on my pellet smoker. They were OK. I think I needed to turn the temp higher at the end.

Yeah I think the key is maybe letting them setup a little before eating so that cream cheese isn’t runny and more solid.

I wanna go through the process and see what I can produce. Hopefully I don’t fuck it up.

Probably a point rather than the more desirable flat. Purists cook the whole thing.
When prepared properly it's one of my favorites. I love Texas style smoked brisket sliced with lots of bar on a poor boy roll. You eat the sandwich by dipping it in barbecue sauce one bite at a time. Sides are bbq beans, french fries and hot spiced vegetables. Some like cole slaw with theirs and in Texas, spicy bread and butter pickles are desired. I wash mine down with ice tea with lemon and lots of ice, no sugar.There is no finer sandwich. Be forewarned, it's gonna take hours of smoking. Also, it's the salt in the dry rub that gives it that incredible crust.

Deboned a leg of lamb. Half rubbed with marinade to grill tomorrow. The other half tightly wrapped in big freezer for future use. Bones separately wrapped and frozen to eventually flavor a pot of lentil soup.

I love leg of lamb with potatoes cooked in the water along with the lamb and some partially cooked carrots and some partially cooked onions. Condiments are only mint jelly. Plenty of ice cold milk, also. My grandmother use to cook leg of lamb every Easter Sunday except she didn't know anything about mint jelly and she always over cooked the carrots and the onions both of which I hated. The first time I had it with the jelly my host supplied each of us with a cut and cleaned half of a refrigerated papaya with some fresh lemon juice squeezed on top. Wow!
 
Obviously didn't celebrate Easter. But like lamb roasted, this is my first attempt grilling. Making pilaf with walnuts and figs from my tree previously dried.
