Here is a good video on making pizza on the ooni and a good dough recipe. Neapolitan pizza is a very specific type. Good thing these days is you can order the 00 flour on Amazon for a reasonable price. Also you can premake the dough and ball it up into servings then freeze them. So pizza day is easy anyday.

Salem has a few good spots, sure. Adam's, Roger That! is amazing. This is just ridiculous though. I've had better BBQ in so many places across the country. Salem doesn't even come close to comparing.

Update on my pizza oven. Love the damn thing. One of my best purchases in a long time. Anyone who loves pizza and BBQ should look into one, they are a lot of fun. Pizza dough is easy enough to make or you can buy it, but I have a freezer full of homemade pizza size balls of dough now. I just found out you can buy dough from Pizza Schmizza so I will have to give that a try. My wife is burning out on pizza a little bit, but since it's pizza she is still mostly ok with my new obsession. It's really easy to use also, the only real trick is getting it off the peel which I have got pretty good at.

We're gonn be visting Austin, TX sometime soon. Naturally, Franklin's is all the (hyped) rage, but I'm hearing there's a better bbq joint in town with not nearly the wait. Anyone know of said establishment?

La BBQ ? https://www.labarbecue.com/menu

I went there it was great. Don't have a point of reference, and I went during the pandemic so it was no wait with a pre-order.

This place was bomb too, but its about 20 min outside of downtown austin

Do you travel for work, or are you just a crazy rich Asian? :)

Hey, BTW, trying to eat healthier these days. Do you have a good recipe for lettuce wraps?

Nah, neither. I don't own a home, just a renter and I have rent control so I'm paying half the market rate here in LA. Plus we have a pretty decent combined income, so we can afford to travel whenever we want really.

Any of you enjoy cooking? I know I do. Anyway, if you have good recipes/techniques you'd like to share here, I'd love to check them out!

Normally, I prefer to grill my steaks. I have one of those kamado-style grills that does an amazing job. I generally do the kosher salt method (I can explain if anyone is interested) and the steaks are really, really good. I prefer a rib-eye (USDA Prime from Costco).

OK, so, we have a Jeff Ruby Steakhouse in Nashville (there are a number of them in the South), and consider it our go-to steak restaurant for special occasions. https://www.jeffruby.com/nashville . Their steaks (and overall atmosphere) are a-mazing!

Now, considering the COVID-19 challenges, they're now offering "meal kits", whereas you drive up, grab the kit (whatever you've ordered), then cook it at home. We haven't done that yet, but I found their technique (video) to be interesting, and certainly worth a try, whether I use one of their steaks, or not.

Check it out.

Giving this method a shot this evening.

I just discovered some vegetarian chorizo sausage that is way better than meat chorizo...doesn't have all the grease...been making Hawaiian chorizo and egg breakfasts all week...el prez would love it....it's made with SOY! and spirulina and good stuff. Happy to find a substitute for once that's actually better tasting that the original and healthier. It tastes exactly like Portuguese chorizo..

With prostrate issues you should consider not eating much BBQ...lot of uric acid in BBQ. Bad for gout and prostrate problems. The best recipe for lettuce wraps is to make delicious food and wrap it in lettuce! I grew a ton of romaine lettuce this year and make wraps all the time. Caramelized onions, mushrooms, cashews, lean strips of meat, bell peppers, cilantro, garlic puree and feta cheese with olives with some sesame oil are great for wraps. Tuna wraps are great too with celery and oil and vinegar.

I already had the surgeries. Plus, this isn't my normal diet. Moderation in everything.......including moderation.
