Who likes home made pasta? I've mentioned my Philips pasta maker before, which I love and I highly recommend to anyone interested, but last night I really nailed the recipe. I had been using standard unbleached bread flour which makes a really good noodle, but not Italy good. I had tried semolina flour before and didn't like the results. After doing some reading I found that 00 pizza four makes really good pasta so I did a 50/50 mix of 00 and semolina and WOW, that's the secret. We even had farm fresh eggs for this batch which gave them that little extra awesomeness.

I might have to give this a shot. Love making and rolling out fresh pasta, so, so much better than normal pasta. Do you just do flour and eggs?

Yes just flour eggs and water. 250g total flour and 95g egg and water mix is the ratio I follow from the pasta maker recipe. Tripled that last night for all of us. I haven't hand rolled in awhile but its probably the same ratio. I found Amazon is a good source for 00 flour if your looking.

Pasta machine on my wish list.
Just made some blondies, basically a non-chocolate brownie crossed with chocolate chip cookie. They are good.

I had heard that and never got it like I wanted. I think I was using too much, a 50/50 mix was great for us, but I'll experiment with %s more.
 
If you're gonna go with a packaged potato salad, Reser's Red Skin (can you say that??) Potato Salad is the best I've found. It's gonna go well with the baby backs I'm grilling. Wifey left this afternoon for Panama City Beach to spend a week with her girlies.

Why do you have to make so many of your posts douchey? If you really don't know the difference between a variety of potatoes and a racist slur maybe you should use this time of your wife being away to read and learn a little.

I've only got so much time in this life. I try to make it a point not to spend any free time with bigots, racists, or individuals who look to actively take away rights from other human beings.
 
Geeze you guys, can we have one tread that doesn't devolve into another discussion on race, sexism, politics and insults. I kind of like just talking about food and food related adventures here. It's a subject that we should all have common ground on.
