Yeah..they could set up something like that..he does have Widows Wail, his dead sons Valerion sward
I actually think it would be the Valyrian sword that Samwell stole from his dad. That Tarly sword is a Great Sword, meaning it is larger and only a two handed weapon. Plus, Sam can't fight. The producers made a point of showing Sam steal the sword and have yet to give a reason for it or even bring it up again. They also reintroduced Gendry, who happens to be a blacksmith. That sword will be reforged into
something cool.

Ok, I just thought about it. I think the final weapon will be made through Gendry forging a new weapon, a Valyrian spear, made from the swords of the great houses reforged as one. With Jamie heading north to honor his word, the only way to build trust with the rest of the houses that will be fighting the white walkers, is for everyone sacrifice their Valyrian weapons. It will forge a great weapon to defeat the Night King's dragon and also act to symbolically unite the differing factions. So, Long Claw, Oath Keeper, Widow's Wail, Heartsbane (the Tarly sword), and maybe Arya's new Catspaw dagger go all Voltron on the Night King.

I just really want to see Jaime as like.... the Doomfist of GoT.

I like the scorpion theory better. If, as we can probably expect, Kings Landing at some point joins the fight, they need to put that Scorpion to use.

Exactly. The scorpion will be used to launch the Valyrian spear I mentioned above.

Another option -- they don't even take out the dragon. Snow jumps from Rhaegal and has hand to hand fighting with the Night King on top of Viserion. If he takes out the Night King, then Viserion would perish as well, yes?

Yup.

The death of Little Finger was disappointing. I thought all his plotting was leading somewhere more interesting than a quick death.

That was a reasonably decent season finale. Though it did reveal the final absurdity of Tyrion's "get a wight to show the queen in order to get a truce" plan--how could you ever trust any truce made by Cersei? When she said, "Not only will we have a truce, why, I'll send all my troops to fight by your side! :D " the quote that was running through my head was what she had earlier said to Dany: "I wouldn't ask that of you and if you promised it, I'd trust you less."

My other thought was that Luke only got to first base with his hot family member before he found out they were related. Jon doesn't take any half-measures.
