This will be my 3rd time. I've been to most of the big stuff on previous trips, any less well known spots I should hit up? Also what's new in the last couple years?

Well, are you a drinker? If so, go to the Double Down saloon. One block south of the Hard Rock.

You wont be disappointed.
 
The gf and I got back from there last month. Had a blast.

Might be too late but join My Vegas on facebook and download the app. We got 2 for 1 tickets to Fantasy, 2 free buffets and stayed at the Luxor for $35 a night. Also did the $20 trick and got upgraded to a 22nd floor tower suite. That was killer.

We stayed a couple of nights downtown and then 3 mights on the strip. Partied downtown. That was a lot of fun! The little stand alone casinos keep the free booze coming non stop and for $20 in slots we got a good buzz going and then checked out some bands that were playing on Fremont street.

We're probably going back in October because we already have a shit ton of comp points from My Vegas. Have enough points to stay 2 nights at Bellagio or 3 at MGM Grand. So by then we'll have enough to get our entire stay free, with free buffets and free tickets to two shows.

I've been playing MyVegas the past year myself! Going in April with the wife. We are getting two free buffets to Mandalay Bay, Monte Carlo, and Luxor. A free night at Monte Carlo, and 2 tickets to see the Jabbawockeez. It's an awesome way to save money going to the best place on earth!

The all you can eat sushi spots where you can order rolls and stuff. I liked Sushi Koma.
lotus of Siam for Thai food
Hot and Juicy Crawfish
iMO: Bellagio cafe has the best steak and eggs in town. Not cheap though.
Tomahawk steak at Del Friscos double eagle. Be sure to check out the James Bond wine rack.
JALEO is probably my favorite restaurant in town. Spanish tapas from Jose Andres.

Burgers are way better at Holsteins at the Cosmo. I'd totally skip InNOut. If you want to blow $40 on the best burger I've ever eaten in my life, get the foie gras burger at Delmonicos steakhouse in the Venetian. It's off menu and they only do 10 per night so make sure they have.

If you're there on a weekend, go to Bouchon at Venetian for brunch. Breakfast in the weekdays but it's so solid there and relaxed, you don't feel like you're in Vegas

Notable:

Downtown Vegas is turning hipster
The High Roller Ferris Wheel and the Linq area
cosmopolitan hotel if you haven't been since they opened up
 
oh yeah, Tacos el Gordo will blow your fucking mind. I think they closed the one next to Wynn though

You should have had your wife playing, you could have doubled up on everything, lol The private Chef's tasting dinner at Wolfgang Puck's looks awesome.

FYI, they release the free rooms in packets. You can only purchase one free room per packet but once that packet is given out you can then purchase a free night from the new packet.

I did not know that, good to know. Are you in any myvegas groups on facebook(where they help with any myvegas questions and provide links for free chips that myvegas posted on twitter, facebook and other social media)?

MyVegas Rocks. That's where I learned about the packet thing.

Also it's 3 rewards with Mlife casinos but you can also redeem rewards with Wolfgang Pick, Monorail, House of Blues, Green Valley and the Station casinos. Allegiant Air is on there now but they fly out of Eugene, lol.
 
The Wolfgang Puck in Vegas is casual dining. Pretty good but a step up from the cheesecake factory.
 
This will sound odd, but the Gordie Brown show at the Golden Nugget was one of the funniest shows I have ever seen. He is a musical impersonator/comedian, which doesn't do him justice. He killed.

I'm going to Vegas March 17th for a conference. Should be fun.
 
From my one trip to Vegas I have one suggestion.

Stay away from Margaritaville.

Worst restaurant I have ever been in, in pretty much every way imaginable.

I would have imagined that the biggest problem for you in Vegas is that there isn't enough lawn for you to yell at people to keep off of.
