What can you do if they don't?
nothing really. If they are violating your copyright you can file a DMCA takedown notice. you can send a cease and desist letter from a lawyer. you can attempt to push the page off google search results.
I usually say its an ex-employee or a competior who is trying to defame us. I've sent letters demanding IP addresses. If you bug them enough, eventually they just do it unless they are a well established company like yelp who deals with this stuff all the time.
