sushi is raw fish, fresher is better. while much of the commercial sushi is flash frozen, some of the better establishments close on monday.

the reason being is that the fish markets are usually not open on monday since fishermen generally don't go fishing on sundays, hence the fish was caught and purchased the prior week.
