I did take one Elk a year when I lived on my ranch near the Wallowa River. It is easier to have the butcher just do me a beef but geez!
Elk is better! Yearling Moose might be the all time winner.
Bring some fresh salt water seafood when you come.
I have harvested two moose. One season, my hunting partner and I made a pre-hunt deal. We would split the meat 50-50.
I took the equivalent of a spike moose. He took a very large moose. It had a 52" spread.
I got half of his monster, and he got half of my spike.
Months after the hunt we both agreed that we could not tell the difference in the taste and quality of the meat. His monster was tender. Right up there in chateaubrian range.
