I am kind of a mushroom geek and well..........a pretty damned big foodie. So, truffles kind of fit both bills. To me, they are king of the culinary world.

Anyways, I used to have a few spots to find them when I lived in southern Oregon, but haven't had much luck in the Portland area. However, today I found a spot. I looked for about an hour and found about a half pound! I will definitely be going back often!

Anybody have any favorite truffle recipes or ideas? I am going to need to find some way to use all of these............

i used to pick matsutakes when i lived in california when the buyers were in town, could make a few hundred bucks easy in a day

they bought the closed ones for the most money, so we would keep the ones that had opened and make a crazy mushroom potluck feast that night, good stuff

a typical truffle recipe would be risotto or shaved on pasta (or in mac and cheese yumm) , bean salad maybe?

i always liked wild mushrooms on my eggs in the morning
 
I ate at L'Atelier de Joel Robuchon a few weeks ago, they had an incredible onion/bacon/quail egg/asparagus tart that had a white truffle supplement on my menu. I didn't get the white truffle on it (+$30!!!!), but it would have been incredible with it.

I plan on a couple of epic dishes like you mentioned El Presedente. After that, I will probably turn the rest into truffle butter. And then I am going back to get more in about 2 weeks. This is going to be a delicious winter. Especially good since I am the official cheese monger at my work. This is going to be fun. Thinking truffle butter christmas presents all across the board.

Hmmm.... Thinking about cutting up some Speck tomorrow and bringing it home. Speck is like a smoked and lightly seasoned Prosciutto. I think this has to happen.
 
i wish i actually cooked more. it'd be good to balance everything out. bacon is salty and truffles have that flavor, something mild like an egg really makes it come together.
