Basically you cook stuff by heating it in a constant water bath. You vacuum seal meats/chicken/etc and then cook it this way so you keep the temperature precise. Works really good, takes a while.
I don't know how much difference it makes but the butcher shop by my house marinades filet and vacuum seals it it big bags and puts it in a rock tumbler type thing. It is amazing.

YOU DON'T NEED TO MARINADE A GOOD STEAK. BUT THEN AGAIN, FILETS ARE GARBAGE
 
They marinade them because they lack flavor
Soooo good. I use salt and pepper on ribeyes......this filet is amazing. I grill it on high for about 10 minutes a side less if smaller and the middle is still slightly pink and the outside is blackened.

Never marinate a steak. Coat a decent helping of salt, sprinkle some Worcestershire sauce on there, get them to room temp and fire up the grill as hot as you can. 5 minutes each side on the hot part of the grill. Best steak you’ll ever have.

t-Bone is my go to. Followed by ribeye

I love a good NY with bone in, charred medium rare. You salt the steak, both sides, with Kosher salt a half an hour before grilling.
I reserve worcestershire sauce for a lesser quality of meat after it's cooked. A good steak requires nothing but the salt layed on a half an hour before grilling and maybe some black pepper after grilling but the pepper is optional. Couple that with a baked potato with salt, butter, sour cream and finely chopped chives or green onion paired with a great red wine and you've got Good Eats.

T-Bones and ribeyes are great steaks.
 
Au contraire. Prime cut filet's are the best.
There is a better steak and it's a wagyu. They're hard to find. You can't find them in a grocery store. Even most butchers don't carry them. Only special butchers.
 
A true steak lover will never order a fillet.
The best steaks are NY, T-Bone, Porterhouse, ribeye. Really good steaks have the bone in.
El Presidente is exactly right when he says women tend to like the fillets for reasons I'll never understand but then they're women.
Most steak lovers want nothing on their steak but salt and they eat them charred medium rare.
The best steaks, of course, are prime or, if you can get them, wagyu.
Steaks with just a little pink in the middle are medium well and too done.
The best steaks are served on a sizzling plate.
Excellent sides are fried mushrooms, grilled asparagus tips and baked potato with sour cream, butter and chives.
To drink, you should have a really good quality dry red wine such as a Mondavi Napa valley cabernet sauvignon that's of a quality that matches the steak.
God you guys are driving me crazy with hunger. I seldom eat that much meat these days but I'm now starting to crave a delicious steak.

Ever have an Emu steak? I did once in Billings and it wasn't bad at all. Taste like beef.

I've never had one of those. I've gotten several Wagyu New Yorks at the Laurelhurst Market but they are all American beef but then I'm a red blooded All American guy.
 
American wagyu is very overrated (snake river farms). Just give me a good prime steak.

I've had Kobe beef in Japan, its amazing.
I really don't know where the American wagyu beef that the Laurelhurst Market sells comes from.
