Ribeye is by far the best. Filet Mignon is the biggest ripoff.
 
I'm a butcher, by the way, so this is a cool thread for me.
 
what's your favorite steakhouse in PDX? I have only really been to Ruth's Chris which was good. Heard Morton's is really good though.

New York cut, rare to medium-rare.
 
Best steak I've had was a NY steak out at Skamania Lodge. I don't go to steak houses so I'm sure it could be topped, but if you ever make it out there check it out.
 
I usually but the Petite Sirloin when I'm cooking at home. I don't eat out too often. Steak isn't THAT expensive if you cook it yourself. And I would ruin a "Good" steak cut anyways with my crude cooking methods.

That's not really steak, but I survived on it in college at $1.99/lb. Saute it with some olive oil over a low heat or char it black outside yet pink inside. There is no in-between with a petite sirloin unless you can spend $4 on a decent marinade.
 
I prefer NY Steak on the grill though when I cook it myself. I think generally b/c it goes on sale more often and harder to screw up. don't cook much though....just usually get the best results at home with NY.

Upon grilling, slightly seasoned with salt & pepper

I marinate my rib eye in a bit of soy sauce and onions and grill it to perfection.
 
Stole this marinade from Dick Vermeil:

1 oz Jack Daniels
1 oz olive oil
smashed garllic to taste

That's generally only for the barbecue...I don't have a smoker.

There are times I want a steak for flavor, and I'll get a ribeye. Other times I'd like it for the tenderness--I agree that filet mignon is generally overpriced, but the El Gaucho chateaubriand is pretty darn good. Morton's (Anaheim) has a pretty good steak as well. I've only been to Ruth's Chris in Annapolis, and while I don't remember exactly what I had there it was very tender.

There's a restaurant near my work that does tournedos. Medium-rare is nice.
