Trying to come up with ideas.

Turkey
Stuffing
Mashed Potatos (Yukon Gold)
Gravy
Cranberry (probably just canned)
Mussels Dynamite

thinking about doing some creamed spinach too....
 
thanks.. kind of a dessert? that might be good.....I have my dad going to costco today before the madness so I have to put my prep list in!
 
A timely thread as the wife, my buddy from DC and I just finalized our menu this morning. We have a lot of food because we're having 16 people over for Turkey day. We have family coming in as well as some friends looking to get out of Dodge. My buddy from DC went to the CIA and wanted to put a twist on some things, but he swears it's not as fussy as it sounds. He's helping to cook, so it's no skin off my nose.

That being said, it's a three-phase meal. Phase 1 is cocktails and appetizers while watching the Detroit game. Phase 2 is Thanksgiving dinner during the D*llas game. Phase 3 is desserts and more booze with stogies (if you're so inclined) while watching the Denver game.

Cocktails: I intentionally overbought when we bought the bar for our wedding, so I used our nuptials as an excuse to build our bar. We pretty much have anything anyone wants to drink.

Appetizers: cheese, smoked salmon, herring and cracker plate, pickled vegetable plate, homemade pub mix, nut plate (after all, you have to graze while watching football).

Salad: Greens with cranberries, pears, candied pecans and goat cheese with a raspberry vinaigrette.

Turkey: One roasted with stuffing in the bird on a bed of winter vegetables (beets, acorn squash, turnips, parsnips, rutabaga, carrots, red potatoes, shallots, garlic and herbs) (the vegetables will be served separately), one deep fried (a request of my friends flying in for the weekend)

Condiments: Turkey giblet gravy and cranberry sauce

Stuffing (in the bird): Cornbread/buffalo sausage family recipe

Dressing: French bread with bacon, apple, sage and caramelized onions dressing

Potatoes: Mashed potatoes

Sweet Potatoes: Yams with maple syrup, bacon, pecans, cranberries and sage

Vegetables: Roasted Proscuitto-wrapped asparagus with garlic, olive oil and lemon; Turkey-roasted winter vegetables.

Bread: homemade crescent rolls, family recipe dinner rolls, herb biscuits

Dessert: Homemade pumpkin pie, homemade apple pie, homemade pear/cranberry pie. Regular whipped cream and bourbon whipped cream

Beverages with dinner: lemon water, white wine, red wine, IPA and porter. Beverages with dessert: coffee, tea, irish coffee, and port.

My two cents: you can never go wrong with creamed spinach.

really easy...just get some frozen mussels from Iwojimaya and then get some of that orange sushi fish roe...then mix that with mayo, spread some on top of the mussels, top with some shredded parmesan cheese then bake.

I made some insanely good creamed spinach a while back...sucks that a whole bag of spinach only makes like a serving of it though. i heard you can get ok results with the frozen bricks of spinach too

jeebus, that's a lot. we have around 15-20 people over usually and only do one turkey....2 would be crazy!

Trying to figure out the bread...cornbread might be a great idea...dinner rolls are just so bleh. Hopefully beaverton bakery is open, might drop by and get some rolls from there.
 
yeah, having the oven available for an hour might be a problem though!

We're doing some par-cooking so some of the dishes just need to be finished in the oven. We're also using our grill for a couple of dishes. My wife's mother and three aunts that are joining us are each taking a side dish and par cooking it at their house.
 
One more thing. In addition to our deep-fried turkey, it seemed a shame to have all that residual hot oil after we cook the bird, so we're also making a hush puppy tray by dropping in chunks of the uncooked dressing. Any other ideas with what to do with that hot oil? I'm looking to deep fry as much of this Thanksgiving as I can.

Yeah, I fly in that morning...don't have much to do...but my dad hogs the oven all day for the turkey!

I use the drippings to make a gravy.....so much better that way!
 
Mac and Cheese might be good too.....the problem is my parents always complain because I spend too much on ingredients whenever I cook stuff.

Mac and cheese would be unbelievable. Damn, between you and ABM, I'm going to gain 10 lbs. next weekend.
 
I've been tempted to buy some Iberico Belota Jamon....saw it at costco here, but I think it would just be wasted for a thanksgiving meal. Maybe I'll see if my brother can pick up some charcuterie from Salumi in Seattle...that shit is incredible.

I would do lamb popsicles for appetizers if i could pull it off but its $$$$. Had some at a dinner the other night....fantastic!


I'm thinking of roasting some garlic for the mashed potatos....I actually bought a ricer at williams sonoma a few years ago just for thanksgiving.
 
Maybe make a Shirley Temples (no one drinks at our parties for some reason). Maybe some mock mojitos would be good too....
 
I am going to Gustavs and washing down Thanksgiving dinner with a couple of steins of beer!
