Deep Dark Chocolate Cheesecake, FTW!

This year I'm thinking about doing a gravy bar, 6 different turkey gravies served with diced turkey breast on toothpicks before dinner so people can sample and select the ones they want for dinner. So far I've found these recipes:
- Bacon-Caramelized Onion Gravy
- Thyme-and-Apple Cider Gravy
- Rosemary-and-Bourbon Gravy
- Bay Leaf, Beer, And Orange Gravy
- Wild Mushroom Gravy
- Traditional Turkey Gravy
Figure you can't go wrong with bacon, beer and bourbon.

It ain't apple pie of it doesn't have gravenstein apples in it. Granny Smiths are a second choice for apple.So, planning Thanksgiving, decided to go classical on menu (plus alternates for the vegetarian/vegan/gluten free folks - it's like I have to make two dinners!)
Anyway. Last winter rains made it a good year for my apple trees, so definitely baking a Very Local Apple Pie. And making vegan ice "cream" sundae (coconut milk ice "cream" and vegan chocolate sauce). But need two more desserts, sorted and sorted and only got it down to five.
So Board, vote on my desserts! (vote for two)
Looks great except I'd replace the pumpkin cream pie with either mince meat or NY style cheese cake on a graham cracker crust and I'd skip the macaroni and cheese. Oh and my stuffing is going to be traditional bread cubes with sage herb, water chestnuts and giblets. Another thing I forgot, I'd replace the pinot noir with a fruity chenin blanc. I'd save the viognier for after dinner.This is what I will be cooking\serving for Thanksgiving 2017

Honey Brined Roast turkey

Cranberry Focaccia stuffing
Turkey gravy
Giblet gravy
Fall salad with choice of dressing
Sweet potato casserole with marshmallows and carmalized pecans
Cranberry sauce
Pumpkin Cream pie
Vanilla ice cream
Wine (pinot noir and viognier), egg nog, apple cider, etc. Beer of course
