Now of course, I guess one could say that while the earth is flat, it doesn't mean it doesn't have peaks and valleys, which could then explain why you don't see stuff far away and oh my god....mind blown. the earth IS flat!

I think you would have to claim that our perception of things such Earth's globe appearance from space would be an illusion because our minds can only perceive it in that way.

If the earth were a ball, we'd be rolling through space. You'd be seeing the sky turn upside down, and that clearly doesn't happen.
