Whip 3 eggs with diced onions, bell peppers and mushrooms. Fry and flip, add (to top cooked side) mozarella, pepperoni (salami, ham or other diced meat), add Mozarella, a tad of marinara then fold, and top with marinara, more Moz and Parmesan; put lid over egg pan to melt Moz, lower flame, garnish with olives and serve.

Other ingredients optional, at any point in the process.

2 tblspns evoo
Whip 3-4 eggs, when eggs have formed a cooked base
Add diced tomatoes, sliced basil, tomato sauce, salt & pepper
on one half the omelet, cover ingredients with 2 slices mozzerella.
Fold the other half of egg omelet over ingredients.
Place omelet in oven under broiler or in toaster oven
Optional...add more sauce & mozzerella over the omelet before
placing under broiler (for 1 1/2 mins).

Easy & delicious.
