I tried the 3-2-1 method on ribs one time and they came out severely over cooked and that was keeping the smoke around 240. I usually skip the middle 2 hour step and just keep them unwrapped on the smoke.

Welcome to no more HBO level quality programming and a more expensive Netflix! Netflix use to try and put out quality material until they realized they could put out dreck and people would still watch it, why would they make a show like Sopranos, The Wire, Game of Thrones, House of the Dragon etc.

Yea my sleep schedule sucks, by the time I get home and unwind a little, it's already 12ish (sometimes later) and the wifes alarm goes off at 5:30 most mornings, I'll stay in bed until 7ish, so a GOOD night is 7 hours. I know it's not good but trade off for getting the chance to still do...
