I’m a cast iron cooker when it comes to bacon. I don’t make it often either. I hardly every have time of inclination for a big breakfast but I do cook dinner often and I’ll sometimes start out with 2 slices of bacon - set aside for either salad or to make a green better. Then use the rendered fat to cook some chix or pork.
I never buy a pack of bacon anymore, I go to the meat counter and buy exactly how many think cut slices I require.
We always buy a pack of low salt bacon and I eat one piece about 1/4 of the mornings. That's less than 2 slices a week.
We also use a cast iron skillet. My wife cooks it over medium heat turning it twice. The less you fool with it the better it comes out. I'm assuming the reader likes his/her bacon crisp.
