Two interesting aspects I took from this vid:

1) Use Wagyu tallow when wrapping the brisket (twice)

2) Letting it rest multiple hours (up to 8)

Jeremy Yoder (Mad Scientist BBQ) compares methods using tallow (and not) in another vid and now swears by this method. I'm planning to try it next time we have a family gathering. Probably Labor Day weekend.

Did you try out the beef tallow? I will say that letting a brisket rest for hours is the way to go, just be careful it doesn't keep cooking in the wrap. Best to pull it out, let it cool some and then wrap again and let it hold for hours. I've gotten to the point where I smoke the brisket until it's time to wrap (I'm happy with the bark) and then into the oven it goes. It might be cheating but it saves me from hassling with the smoke and gives me some time to sleep.

Me and the wife went back to teaching after the summer off and decided to make a little feast for us on the smoker plus some brussel sprouts in the air fryer. I don't normally do the tomahawk ribeye but figured the dog needed some deliciousness as well.

Fried two of the pies, one for me, one for my neighbor. She was making chocolate chip cookies so brought me some. Carrying coals to Newcastle indeed.
 
Peaches nearing the end. Just made a big peach Bundt cake. Very pretty and smells great but I won't taste for a while. After it cools it's going to be tightly wrapped and stashed in deep freeze awaiting an occasion.

Starting to harvest green beans. Ants on the plants. Don't harm yield but after picking a bunch I had to hop into the shower and start all over from the skin up.
 
OK, so my wife is away on a birthday trip with her sis in San Francisco. Sooo, that means, you guessed it, grilled ribs for moi! Freakin' delicious I might add!!

Can't stand chicken or fish in my tacos. I want beef, dammit. Also, I want an excellent fresh red salsa inside. A little grated cheese some chopped up green part of a green onion and I'm good.

The best tacos I ever had were eaten with a poor Mexican family of migrant workers in Salem. Their only shortcoming was the salsa which Chevy's used to make very good but I've made the very best. I wish I could have offered that family something but I was their guest and they would not accept anything other than my company.

As far as the Pacific North West is concerned, Chevy's is out of business. I noticed them starting to go bad in Southern Cal. and then here in Oregon.

They originally had the best Mexican food out there and then they slowly went down hill until they had no customers left. They were very good at first except they played a lot of pop songs whereas I wanted to hear Mariachi stuff. I wanted to look on the walls and see adobe, sombreros, a Clint Eastwood style poncho, some Mexican cowboy boots and some Maracas. I wanted to see Mexicans playing the trumpet and guitars while singing from table to table.
