I am finding more uses for my baking steel. We have been doing steaks in the oven, searing them in the cast iron, then the whole cast iron in the oven on the steel for about 10 minutes. They have been coming out great and super easy.
 
Wife wanted some fettecine Alfredo this past weekend but trying to be healthier so found another recipe using milk and chicken stock. It wasn't bad, solid B- and doesn't really compare to a real Alfredo sauce, but if you're trying for a good substitute and don't want all the calories, it worked pretty well.

I don’t live too far. Haven’t ate at a skippers in years. Loved it as a kid. Every time I’ve driven by there it looks like no one’s there. My buddy says he’s tried going a few times and there’s signs on the door saying due to lack of staffing they’re only open a couple days a week.

Yeah, I used to love that place as a kid. Prob not as good but if open next time I'm in PDX I'll peep it
 
This is one of my cooking weekends.

Chicken soup with Israeli couscous and greens
Cheese bread
Whole wheat 3 cheese pizza
Chicken soft tacos
Short ribs and cauliflower puttanesca
Roasted mushroom and leek soup
Roasted butternut squash salad
Two pots of beans (garbanzo and kidney)
Also last night's dinner, pan seared mahi mahi and tonight strip steak with chimichurri

My kitchen floor, washed yesterday, is a mess. Both freezers are full and I am running out of containers.

Medium rare rib eye with a black garlic and herb compound butter on top, fries with gochujang dipping sauce, and butter garlic roasted mushrooms.

Got chicken in slow cooker. Flourless chocolate cake and creme anglaise in refrigerator. Hauling them all to my brother's for Seder.

No matzo in stores near me. Aside from my 55+ community mostly Latinx so not much of a market. Schlepped to North Hayward Safeway. They have a big display and not one item kosher for Passover. Matzo style squares? Noodles? Cookies? Left my brother s message asking if he has a spare box
