Ever heard of Din Tai Fung? I went there when we visited Seattle this Summer. A-mazing!!

I like good old Texas chili except with a few beans in it. It's got green chopped poblano chilies, chili powder, roughly ground beef chuck, tomato sauce and paste, chopped onions, some garlic, stewed and chopped tomatoes, a few red kidney beans, some beef broth.
My God, I think I'll cook some for dinner soon. Leftovers are great for coney islands.
 
I wanna get some Kitchen-Aid attachments starting with a grinder so I can make course ground chuck for my chili. I'd also like to stuff some sausages.

I've got that attachment and it's fun but way more of a project than I planned. Grinding your own meat is a chore. If you ever get around to it the best burger combo is 1/3 sirloin, 1/3 brisket, 1/3 short rib.
 
Who likes pasta? I got this last year and love the damn thing. It's so easy and homemade pasta is extra good. One of my contributions to Thanksgiving was homemade Mac n Cheese with homemade pasta. It's a house favorite.

I'm not talking hamburger. I meant chili burger.
 
It's easier to grind meat if you freeze it briefly.

Making double chocolate mint brownies and double pecan cookies for small social gathering of vaccinated boostered people. Needed creme de menthe for brownue frosting. Haven't used it in years (it keeps almost forever) so it was in very back of cabinet. No dead bodies inside.
Sunday will bake cookies for @PHXBlazer1.
Auto correct changed boostered to blistered. We are gym mates so maybe also blistered.

A couple of recent ones, Grilled new york steak, Polenta wedges, sautéed asparagus with truffle salt and lemon zest, topped with a shiitake-pinot sauce.
