The best sandwich is the New York steak sandwich. I used to eat those for lunch in Reno when we went once a year and sometimes twice or even thrice.Tenderloin is good in a sandwhich.

Bacon will not make a crust.I believe it adds to the flavor. Bacon provides the salt.
Im not a fan of fatty meats, which i know adds to the flavor. So i prefer a nice filet medium rare with bacon and a dash of A1 for some vinegar zest.Filet mignon isn't a good steak though. That's why they use it with steak au poive (which I actually love). So you have to use something like a sauce or bacon to add flavor
