Omelettes? What do you inside an omelette?

I'm a sucka for Chili omelettes with some of that orange cheese on top. I like putting that on sour dough bread and then squeezing some ketchup on top. Gotta go to a greasy spoon diner to get it done right though.

Also like Smoked Salmon and Goat Cheese.

My perfect omelette would have mashed up tater tot consistency hash browns in it with mushrooms, onions, green peppers, steak, cheese, and a tangy chipotle sauce.

My favorite egg dish is actually a "scramble". The "Joe's Scramble" which has ground beef and spinach. I actually got one here when I was in San Joe a few years ago, where they supposedly invented it.
