A fun thing about Australian wines. If you drink ones from small vineyards you can often actually taste the Eucalyptus. The larger vineyards it becomes more faint as the eucalyptus is further away from the bulk of the grapes. But Eucalyptus and Smoke are two compounds that can enter the grape skin directly and make it all the way through the vinification process without being altered. With marijuana there has been conflicting results and the science isn’t set yet.but most compounds on grape skins never make it all the way through in tact.

There are some good ones - you just need to know what to look for. Penfolds makes some nice ones (though you regularly see their cheaper ones on the grocery store shelves). They’re a pretty big Aussie name, but they have some nice wines and are generally easy to find.

I've had Penfold's twice. Not a good result.
 
Hey, buddy, did you finally try a bottle of mead?

I'm an amateur mead-maker, with only a couple five gallon batches under my belt. First was a very dry pineapple-blueberry. Second was a sweet cranberry-pear-ginger. Next I want to re-introduce a small amount of honey when I rack into bottles, to re-activate the yeast and create a sweet mead-champagne (carbonated). Gonna go with chokecherries and thimble berries picked right out of my backyard in the Bighorn Mountains.

Wow! The Bighorns! That is a neat place. Too far from the sea for me, but I liked the visit there. Beautiful!

They are beautiful. Known for their abundance of mountain meadows, similar to ranges in Europe. I do miss the beach, though. Spend most of my time on the coast when I come back to Oregon.

Will, do take the time to enjoy while you are there. I lived in the Wallow and Blue Mountains for awhile. Damn that was neat, a sailor does need to dry out now and then. Just to get it right so everyone will know. Those Big Horn Mountains are in Wyoming, Right? I had them in memory but since I read your post I got to wondering, am I remembering the right place? Was it South Dakota? No! Coming out of South Dakota into the Big Horn Mountains of Wyoming!

Penfolds secret is shitloads of liquid tannin additions. But I admit, I still like it, but not for the price.
