Not enough fat. Low fat burgers tend to be dry.
Yes you need a good 20% fat or so that the bison doesn't have. Mixing it with some bacon or ground pork does the trick.
I've ground my own burgers a few times. I've found the magic blend to be 1/3 sirloin, 1/3 brisket and 1/3 short rib. It's more work than it's usually worth though.
I feel that way about making burgers at home in general. Since it's just me and the wife, by the time you buy all the ingredients and toppings, it's more of a hassle than just going out. I love to fire up the grill/smoker and find I can make most dishes better than many restaurants, but a good burger I'm more than happy to pay for someone else to make.

I pigged out on the frech fries but found the hamburger to be less desirable.I also have to give a shout out to Christines in Vancouver just down from the Fort. Drive by and it looks like a little non-descript house but inside they are serving up really good breakfast and lunch, including a great burger. Also a little surprised no one has mentioned Helvetia Tavern, a great stop on Hwy 26 as you're headed for Seaside/Cannon Beach.

I think it used to be more popular, but perhaps the new options in the area have taken business away.went there about three times. It's on one of my two main routes home. Didn't really care for it. It's okay but nothing spectacular. if you'll notice there's never many cars in their parking lot.

Five Guys fries are the worst I have ever had. Limp, greezy, I can actually squeeze them and grease drips out. Horrible. And that report comes from eating their fries at 3 different locations.

I have eaten 5 times at 3 diff Five Guys. The meat was tasteless, the bun disintegrated and the fries limpy/greasy.I've still yet to go there.
Always the rule of thumb, though, wherever you eat that has a deep fryer: Try to go during off hours.
