Charred medium rare. I like to set the fat on the outside, on fire until it gets blackened. Sometimes I freeze my NY before grilling it just so the inside will be medium rare. Then, I open a really good bottle of red from my collection. Next, comes a baked potato with sour cream, butter and chives. For veggie, this varies, sometimes it's grilled asparagus, sometimes brussel sprouts, other times grilled slices of sweet potato, spinach, turnip greens (yum), green beans.Yes. Like cooking a steak well done or mixing wasabi and soy sauce together into a slurry.

Sometimes when we grill, we open a bottle of white that's been chilled. This is usually a sweet white. Last time we had a white it was ice wine (yum). I think I'll buy a bottle of Chenin Blanc that's sweet and chilled. That's the most delicious white wine I've ever had.
